Constantly striving to learn and improve their chocolates, Trish and Michael travel the world visiting cacao farmers – learning about the growing regions, flavor profiles, and supporting the efforts of these hardworking growers.
Vintage Chocolate
Cacao beans, like wine grapes, have vintages and unique flavor profiles from year-to-year. Coaxing those flavors from the cacao beans is the gold dust (magic). Trish suggests that customers let the chocolates slowly melt on their tongues to fully experience all the complex flavors.
